With its crisp, clean lines and straightforward operation, the Linea Classic has been a tried-and-true countertop staple for over 30 years, yet it remained largely unchanged during that time. All of that is now changing with the release of the Linea Classic S EE and the upgrades that come with it.
The La Marzocco Linea Classic S EE still makes use of dual boilers for optimized espresso brewing and milk steaming, but a dual PID now gives baristas the ability to control the dual boilers electronically and quickly. Saturated groups, with their constant water circulation, ensure thermal stability is never sacrificed, even in the busiest cafe. These features are controlled by new, updated push buttons that offer better tactile feedback. One of the most welcomed new features to the Linea Classic S EE is a half-turn steam knob, which requires less movement by the barista to reach full steaming power, reducing the risk of wrist fatigue and injury over long periods of time.
The updated Linea Classic S AV is an auto-volumetric espresso machine, meaning that the amount of water that passes through the group head can be programmed to achieve a consistent shot volume. Once the programmed amount of water has passed through the coffee puck, the machine will automatically disengage the shot. This allows the barista to steam milk or perform other tasks while the espresso shot pulls without worrying about having to stop the shot manually: a feature that optimizes workflow in the busiest settings. The La Marzocco Linea Classic S AV still uses dual boilers for unparalleled espresso brewing and milk steaming, but a dual PID now gives baristas the ability to control the boilers electronically and quickly.
